Creamy Chickpea Hummus with Warm Pita
Hummus blended long and loosened with ice water until it's pale, whipped and silky — the texture restaurants get and home cooks usually miss. Served with warm pita.

Ingredients
Serves 3.
- 400 gcooked chickpeas, drained (reserve a few for garnish)
- 3 tbsptahini
- 2 tbsplemon juice
- 2 clovesgarlic
- 3 tbspice cold water, plus more as needed
- 2 tbspextra virgin olive oil, plus more to serve
- 1/2 tspground cumin
- 1/2 tspsalt
- 3 piecespita bread, to serve
- to garnishpaprika, olive oil, chopped parsley

- Small pan or oven, to warm the pita
Method
Read each step end-to-end before starting.

Start with tahini and lemon
Blend the tahini and lemon juice together first, on their own, for 30 seconds until it turns pale and creamy. Whipping the tahini before anything else is the secret to a light hummus.

Add the rest
Add the chickpeas, garlic, cumin and salt. Blend for a full 2-3 minutes — much longer than feels necessary — scraping down the sides, until thick and smooth.

Loosen with ice water
With the motor running, drizzle in the ice cold water a tablespoon at a time. The cold water and long blending whip air in and turn it pale and fluffy. Add water until it's softer than you think it should be — it firms up in the fridge.

Warm the pita
Warm the pita in a dry pan or a hot oven for a couple of minutes until soft and puffed.

Serve
Spread the hummus into a shallow bowl, make a well in the centre with the back of a spoon, and pool olive oil in it. Scatter with the reserved chickpeas, paprika and parsley. Serve with the warm pita.
