Dark Chocolate Avocado Mousse
Ripe avocado blended with cocoa and dates until it disappears into something that tastes like mousse, not like avocado. Ready in ten minutes, no cooking required.

Ingredients
Serves 4.
- 2ripe avocados, very soft, flesh only
- 1/3 cupunsweetened cocoa powder
- 4Medjool dates, pitted and roughly chopped
- 3 tbspmaple syrup
- 1/4 cupplant milk, plus more as needed
- 1 tspvanilla extract
- 1 pinchsalt
- 1 tbspdark chocolate shavings, to serve, optional

- Food processor or high-speed blender
Method
Read each step end-to-end before starting.

Soften the dates
If your dates aren't very soft, cover them with hot water for 5 minutes to soften, then drain well.

Blend
Add the avocado flesh, cocoa powder, dates, maple syrup, plant milk, vanilla and salt to a food processor. Blend on high, stopping to scrape down the sides once or twice, until completely smooth — this takes longer than you'd expect, give it a full 2-3 minutes.

Adjust the texture
If the mousse is too thick to blend smoothly, add plant milk one tablespoon at a time until it moves easily but still holds its shape on a spoon.

Taste and chill
Taste and adjust sweetness with more maple syrup if needed. Spoon into small serving glasses and chill for at least 30 minutes — it firms up further in the fridge.

Top with dark chocolate shavings just before serving.
