Smashed Avocado Toast on Sourdough

Crisp sourdough under properly seasoned smashed avocado. It lives or dies on two things: toasting the bread hard, and seasoning the avocado more than you think it needs.

  • 2 slicessourdough bread, cut thick
  • 1large ripe avocado
  • 1 tsplemon juice
  • 1/2small garlic clove, optional
  • 1/2 tspchilli flakes
  • 1 tspextra virgin olive oil
  • 1/4 tspflaky sea salt
  • 1/4 tspblack pepper, freshly cracked

Method

Read each step end-to-end before starting.

    Toast hard

    Toast the sourdough until deeply golden and properly crisp — it needs to be sturdy enough to hold the avocado without going soggy. If using a griddle pan, rub the hot toast with the cut side of the garlic clove for a subtle backbone of flavour.

    Season the avocado properly

    Scoop the avocado into a bowl, add the lemon juice, half the salt and a little pepper, and mash with a fork to a chunky, not smooth, texture. Taste it — under-seasoned avocado is the most common mistake here. Adjust salt until it tastes bright and alive.

    Assemble

    Pile the avocado onto the toast and spread to the edges so every bite is covered. Drizzle with olive oil, then finish with the chilli flakes, remaining flaky salt and a final crack of pepper.

    Eat immediately

    Avocado toast waits for no one — serve and eat while the toast is still hot and crisp.
